Fruit Cobbler



Fruit Cobbler

1/2 cup (1 stick) butter
3 cups fruit or berries
a little orange juice or lemon juice
1 1/2 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup sugar
1 1/2 cup milk

Place berries or cut up fruit in a small bowl. Sprinkle with sugar, and add a "splash" of orange juice or a few drops of lemon juice. Let fruit sit for a little while. Melt butter in 350 degree oven in large (9 x 12 or 10 x 13 inch) baking dish. Add fruit to melted butter, spreading to the edges of the pan, and place in the oven for a few minutes so the fruit gets warm.

Combine remaining ingredients to make a smooth and creamy batter. Pour batter evenly over fruit and butter. Bake at 350 degrees for about 35 to 40 minutes, until crust is golden brown and filling is bubbly.

The cobbler in the photo is made with 2 cups blueberries, 1 cup raspberries and a splash of orange juice.
