Recipe for Beef Enchiladas



Recipe for beef enchiladas

1 lb. gournd beef
1 package tortillas
1/2 cup sour cream
2 cups shredded cheddar cheese, divided
enchilada sauce

Brown ground beef in skillet. Drain and let cool. Place in a bowl. Add 1/2 cup sour cream and 1/2 cup cheese to meat. Combine. Make enchilada sauce.

1/2 cup canola oil or vegetable oil
4 tablespoons self rising flour (or 4 tablespoons flour & a pinch of baking powder)
2 teaspoons chili powder, or more to taste
2 teaspoons garlic powder
2 8 oz. cans tomato sauce
3 cups water

Heat oil in skillet. Add flour and cook until lightly browned and bubbly. Add chili powder, garlic powder and tomato sauce. Cook and stir until smooth and creamy. Add water, cook and stir until well combined. Simmer for about 10 minutes.

Place a small amount of sauce in the bottom of baking dish. Fill tortillas with meat mixture. Place in dish, seam side down. Pour sauce over all. Bake for 30 minutes in 350 degree oven, or until bubbly. Top with 1 1/2 shredded for the last minutes of baking time.
