Sausage stuffed pork chops
6 boneless pork chops about 1 inch thick
2 tablespoons olive oil
Stuffing:
1 1/2 cup breadcrumbs
1 egg, beaten
1/2 pound sausage
1 cup applesauce
2 tablespoons dried onion
Glaze:
4 tablespoons coarse ground mustard
4 tablespoons brown sugar
2 tablesoons orange juice
2 teaspoons Worcestershire sauce
Cut a large slit in each pork chop.
Mix together ingredients for stuffing. Stuff chops. Sprinkle liberally with pepper. Heat oil in skillet over medium heat. Place chops peppered side down in oil in skillet.Brown 4 to 5 minutes. Turn and brown 4 to 5 minutes on other side.
Meanwhile, mix together ingredients for glaze. When chops are fully browned, brush with glaze, place glazed side down in baking pan, and brush the other side with glaze. Bake at 375 degrees for 30 to 40 minutes. Use a meat thermometer to make sure pork reaches 150 degrees.
